It’s one of those sauces that people love for its bold, sweet and spicy flavor. In the U.S., sauces are everywhere. Walk into any grocery store and you’ll see shelves filled with bottles and jars in every style you can imagine. From barbecue sauce and hot sauce to honey mustard and sweet chili. There’s always something new to try.
That love for sauce also shows up in restaurants. Sometimes dishes arrive completely covered in it. We usually prefer to order sauce on the side. That way you can decide how much you want to add and keep the balance of the dish exactly the way you like it.
What is firecracker sauce?
But what exactly is firecracker sauce? It’s basically a type of chili sauce with a balance between heat and sweetness, sometimes with a slight tang. The combination of these flavors makes the sauce incredibly addictive. It also works really well in marinades, as a dip, or as a flavor boost for other dishes.
The perfect firecracker marinade
For our firecracker marinade we use sambal (chili paste), but you can also use sriracha. By combining the sambal with soy sauce, brown sugar, garlic, and ketchup, you get a sauce that’s savory with just the right balance of sweetness and heat.
The trick in this recipe is the marinade. Let the salmon marinate for at least 2 hours so the flavors can really soak into the fish. This ensures every bite is full of flavor. If you have more time, you can easily let the salmon marinate overnight.
How do you make firecracker salmon?
There are several ways to cook firecracker salmon. You can grill it, pan fry it, or bake it in the oven. Want a lightly crisp exterior? Cook the salmon like we do in a skillet with a little oil over medium heat so the outside develops a nice caramelized crust. If you prefer evenly cooked salmon, the oven works well too. About 12 to 15 minutes at 400°F is perfect.
Serve the salmon with steamed rice and crisp vegetables such as stir fried broccoli, bok choy, or sugar snap peas to complete the dish. Want extra sauce on the side? No problem, just don’t overdo it. The flavor is strong enough even without extra sauce.

Ingredients
- 4 salmon fillets
- 2 cloves garlic
- 1 bunch green onions
- 2 tablespoons sriracha, or sambal oelek (chili paste)
- 2 tablespoons soy sauce
- 1 tablespoon tomato ketchup
- 1 teaspoon brown sugar
- 1 teaspoon ground ginger
- 1 teaspoon paprika
- Vegetable oil
Instructions
- In a bowl, mix 2 tablespoons soy sauce with 2 tablespoons srirache (or sambal), 2 tablespoons vegetable oil, 1 tablespoon tomato ketchup, 1 teaspoon brown sugar, 1 teaspoon ground ginger, and 2 pressed cloves of garlic to make a marinade.
- Sprinkle the 4 salmon fillets with paprika first, then coat them all over with the marinade. Place the salmon in a shallow dish, cover, and let it marinate for at least 2 hours or up to overnight.
- Heat a large skillet with a generous splash of vegetable oil. Cook the salmon for about 5 minutes on one side, then 2 minutes on the other side.
- Serve with sliced green onions and extra sriracha or sambal if you like. Delicious with white rice and stir fried broccoli, roasted broccolini or bok choy, for example.
