Description

Roasted broccolini with garlic lemon oil and almonds. An easy and healthy side dish that pairs perfectly with fish, meat or vegetarian meals.


Ingredients

  • 1 bunch broccolini (about 7 oz)
  • 1 garlic clove
  • 1/2 lemon
  • 2 tablespoons extra virgin olive oil
  • Freshly ground black pepper
  • Coarse sea salt
  • Sliced almonds, optional

Instructions

  1. Preheat the oven to 375 to 400°F.
  2. Rinse 7 oz broccolini and trim the tough ends if needed. Place in a baking dish or on a sheet pan and drizzle generously with olive oil.
  3. Roast for 15 to 20 minutes, tossing halfway through.
  4. In the meantime, make a dressing with 2 to 3 tablespoons extra virgin olive oil, the juice of 1/2 lemon, and 1 finely minced garlic clove. Add some freshly ground black pepper.
  5. If needed, toast a handful of sliced almonds (or pine nuts).
  6. Drizzle the broccolini with the garlic lemon oil as soon as it comes out of the oven. Finish with coarse (sea)salt and the sliced almonds. Serve right away.
