Description
Roasted broccolini with garlic lemon oil and almonds. An easy and healthy side dish that pairs perfectly with fish, meat or vegetarian meals.

- 1 bunch broccolini (about 7 oz)
- 1 garlic clove
- 1/2 lemon
- 2 tablespoons extra virgin olive oil
- Freshly ground black pepper
- Coarse sea salt
- Sliced almonds, optional
Instructions
- Preheat the oven to 375 to 400°F.
- Rinse 7 oz broccolini and trim the tough ends if needed. Place in a baking dish or on a sheet pan and drizzle generously with olive oil.
- Roast for 15 to 20 minutes, tossing halfway through.
- In the meantime, make a dressing with 2 to 3 tablespoons extra virgin olive oil, the juice of 1/2 lemon, and 1 finely minced garlic clove. Add some freshly ground black pepper.
- If needed, toast a handful of sliced almonds (or pine nuts).
- Drizzle the broccolini with the garlic lemon oil as soon as it comes out of the oven. Finish with coarse (sea)salt and the sliced almonds. Serve right away.
