What really makes this wrap stand out is the crispy chicken. You can use store-bought breaded chicken cutlets, which we do all the time. But if you have a little extra time, making your own is simple. You only need boneless, skinless chicken breasts, all-purpose flour, an egg, and cornflakes.

Coat the chicken in flour, dip it in a beaten egg, and then press it into crushed cornflakes. Cook the chicken in a skillet with a little vegetable or sunflower oil until golden and crisp, or bake it in the oven. You can even use an air fryer if you prefer. Slice the chicken into strips and add it to the filling. The warm, crispy chicken paired with fresh vegetables and a creamy sauce makes this one you’ll want to make again.

The perfect honey mustard sauce

A wrap isn’t complete without a good sauce. For ours, we make a simple honey mustard sauce. Mix 2 to 3 tablespoons plain Greek yogurt or skyr with 1 tablespoon mayonnaise, 1 generous teaspoon honey, and 1 teaspoon Dijon mustard. Stir well and taste. Want it sweeter? Add a little more honey. Prefer more bite? Add extra mustard. This sauce really brings everything together.

Building the wrap

Start with a layer of crisp iceberg lettuce. Add finely chopped red onion, sliced cucumber, cherry tomatoes, and diced avocado. Top with the crispy chicken for that satisfying crunch. Finish with a sprinkle of grated Parmesan cheese. Want to make the wrap more filling? Add some brown beans or kidney beans for extra protein and fiber. You can think of it as a loaded salad rolled up in a tortilla.

Ingredients

  • 1 cup cherry tomatoes, halved
  • 2 cups shredded iceberg lettuce
  • 4 large flour tortillas
  • 2 crispy breaded chicken cutlets
  • 1 ripe avocado, diced
  • 1 small red onion, finely chopped
  • 1/2 diced cucumber
  • 2 tablespoons plain Greek yogurt (or skyr)
  • 1 tablespoon mayonnaise
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • Freshly grated Parmesan cheese

Instructions

  1. Preheat the oven to 400 to 425°F. Bake the breaded chicken cutlets for about 15 minutes, until cooked through and crisp.
  2. While the chicken is baking, finely chop the red onion and dice the cucumber. Halve the cherry tomatoes and dice the avocado. Grate some fresh Parmesan cheese.
  3. In a small bowl, stir together the Greek yogurt, mayonnaise, honey, and Dijon mustard until smooth. Taste and adjust if needed.
  4. Warm the tortillas according to the package directions. Spread each tortilla with some of the sauce. Top with iceberg lettuce, the chopped vegetables, sliced crispy chicken, and finish with grated Parmesan. Roll up tightly and serve.
