These flavorful salmon foil packets are not only delicious, they’re ready in no time. Perfect for a summer evening with friends or a simple weeknight dinner outside. No grill? No problem. These salmon packets turn out just as well in the oven.
What you need
For this recipe, we use fresh salmon fillets and wrap them in aluminum foil. We add sliced green onions, lemon slices, and a few sprigs of fresh dill for a bright, fresh flavor. We previously shared an Asian-style version with teriyaki sauce, but this time we’re going with a fresh lemon mustard marinade. Simply mix olive oil, Dijon mustard, lemon zest, and the juice of half a lemon. Stir it together, pour it over the salmon, and you’re done.

Ready in minutes
Place the marinated salmon fillets (about 6 oz each) on sheets of aluminum foil, add the herbs and lemon, fold the foil tightly, and place the packets on the grill. After about 12 minutes, the salmon will be perfectly cooked, tender and full of flavor. If you prefer to use the oven, bake them in a preheated 400°F oven. Serve the salmon foil packets with pan-fried potatoes, roasted potatoes, grilled vegetables, or a fresh salad for a complete meal.

Ingredients
- 2 salmon fillets, skin on
- 1 lemon
- 4 green onions, sliced
- 3 tablespoons olive oil
- 1 tablespoon Dijon mustard
- Fresh dill
- Salt and black pepper
Instructions
- In a small bowl, mix the olive oil and Dijon mustard. Finely grate the zest of half the lemon and stir it into the mixture along with the juice of half the lemon.
- Brush the salmon fillets with the marinade and season with salt and black pepper.
- Form a tray from aluminum foil and place the salmon in the center. Add extra lemon slices, sliced green onions, and sprigs of fresh dill.
- Close the foil tightly and place the packet on the grill for about 12 minutes, or until the salmon is cooked through. Serve right away.
- If using the oven, bake the packets in a preheated 400°F oven for 12 to 15 minutes. Then carefully open the foil and return to the oven for about 5 more minutes.
