Today we’re making a hearty salad with crispy chicken. It’s flavorful, wholesome, and comes together fast.

The mix of crispy chicken, fresh vegetables and fruit, and a creamy yogurt dressing makes this salad perfect for a healthy dinner. We often make it in spring or summer after a busy workday. It’s on the table in no time.

Crispy chicken: homemade or store-bought?

The crispy chicken gives this salad a great crunch. You can use a store-bought breaded chicken cutlet, but making it yourself is easy and tastes even better. All you need is boneless, skinless chicken breasts, all-purpose flour, an egg, and cornflakes.

First coat the chicken in flour, then dip it in a beaten egg, and finally press it into crushed cornflakes. Cook the chicken in a skillet with a little oil or bake it in the oven until golden brown and crisp. Slice it into strips and it’s ready to add to your salad. That said, a ready-made breaded cutlet is the quickest option.

Fresh yogurt dressing

No salad is complete without a good dressing. We always make ours from scratch. It’s simple and a lot lighter than most bottled versions. Take a look at the ingredient list on store-bought dressings and you’ll often find plenty of sugar and additives.

Crispy chicken salad recipe

For this salad, we stir together 1 cup Greek yogurt or plain skyr with 1 small clove of garlic, pressed or finely minced, and the juice of half a lime, about 1 tablespoon. That’s it. The dressing is fresh and light and pairs really well with the crispy chicken and vegetables. You can season it with a pinch of salt and black pepper, and add 1 teaspoon of honey or a little Dijon mustard if you like.

Colorful and nourishing

This salad is packed with colorful seasonal produce and fruit. Think sweet cherry tomatoes, crisp radishes, creamy avocado, and thinly sliced green onions. For a bright finishing touch, we add segments of a mineola or mandarin orange.

Ingredients

  • 4 cups mixed greens of your choice
  • 1 cup cherry tomatoes
  • 1 cup radishes
  • 1/3 cup plain Greek yogurt
  • 3 green onions
  • 2 crispy breaded chicken cutlets, or make your own
  • 2 large eggs
  • 1 clove garlic
  • 1 mineola or mandarin orange
  • 1 ripe avocado
  • 1/2 lime

Instructions

  1. Preheat the oven to 400°F. Bake the breaded chicken cutlets for about 15 minutes, or until golden and heated through.
  2. At the same time, boil the eggs for 7 minutes until hard-boiled.
  3. Place the mixed greens in a large salad bowl. Slice the radishes, halve the cherry tomatoes, thinly slice the green onions, cut the mineola into segments, and dice the avocado. Toss everything gently with the greens.
  4. In a small bowl, stir together the Greek yogurt, the pressed or finely minced garlic clove, and the juice of half a lime, about 1 tablespoon. Mix two-thirds of the dressing into the salad.
  5. Slice the crispy chicken into strips. Divide the salad between plates and top with the chicken and halved eggs. Spoon the remaining dressing over the top before serving.
