Ingredients

  • 5 oz plain fresh goat cheese
  • 1/2 cup walnuts
  • 4 Belgian endives
  • 2 chicken breasts
  • 2 tablespoons brown sugar
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • A handful of radishes
  • Olive oil

Instructions

  1. Preheat the oven to 375°F.
  2. Grease a baking dish with olive oil and spread out the endive leaves. Sprinkle with 2 tablespoons brown sugar or drizzle with honey. This helps them caramelize.
  3. Slice 2 chicken breasts lengthwise into even pieces and season all over with salt, pepper, and garlic powder. Arrange the chicken between the endive.
  4. Add a handful of sliced radishes and 1 3/4 oz chopped walnuts. Crumble 5 oz goat cheese over the top.
  5. Sprinkle with 1 teaspoon dried thyme, add a few extra turns of black pepper, and drizzle with a little more olive oil. Bake for about 20 minutes, or until the chicken is fully cooked.
