Hokkien Noodles with Shrimp
Singapore stir-fry
As with many Asian dishes, there are countless variations of Hokkien noodles.
Although the name refers to the Chinese province of Fujian, also known as Hokkien, this popular noodle dish is eaten throughout Southeast Asia. The Singapore version is a delicious stir-fry known for its rich flavors and quick preparation.
It combines tender pieces of meat (or seafood, such as shrimp), crisp vegetables, and the heat of sambal or red chili peppers. An ideal meal when you want to get something delicious on the table quickly during the week.
Singapore meets the supermarket
For our quick version, there’s no need to make a trip to an Asian grocery store. You can find everything you need at a regular supermarket. We start by cooking cubes of pork belly in a hot wok for about 4 to 5 minutes, until crispy.
Next, add the large shrimp along with the finely chopped shallot and garlic. Once they become fragrant, add the concentrated vegetable broth, followed by the bean sprouts and sliced green onions.
Flavors come together
Next, add the egg noodles, which you soaked beforehand, to the pan. The scrambled eggs can go in now as well. Finally, season everything with a generous spoonful (2 to 3 teaspoons) of sambal oelek (or sriracha), two tablespoons of soy sauce, and two tablespoons of fish sauce.
Toss everything well so the flavors combine and the noodles can soak them up. In Singapore, squid is sometimes added as well, but as mentioned, our version keeps things simple and quick.
Time to serve
For the finishing touch, top the dish with roughly chopped chives, a lime wedge, and some thinly sliced red chili pepper if you like some extra heat. Serve straight from the wok. In short, Singapore Hokkien Noodles with Shrimp are not only delicious, but also really easy to make.
Perfect for a weeknight meal or when you want to quickly put something on the table for guests. One bite and you’ll feel like you’re at a bustling food market in the heart of Singapore. Time to fire up the wok!
