Description
Hokkien Noodles with Shrimp are a Singaporean stir-fry with egg noodles, shrimp, pork belly, bean sprouts, sambal, soy sauce, and fish sauce.

- 5 oz egg noodles
- 4 oz cooked large shrimp, peeled, deveined, and tails removed
- 1 oz fresh chives
- 1 cup bean sprouts
- 3 cloves garlic
- 2 shallots
- 2 eggs
- 2 boneless pork belly slices
- 1 vegetable bouillon cube (0.36 oz)
- 1 lime
- 1 bunch green onions
- 1 red chili pepper (such as a jalapeño), optional
- 2 tablespoons fish sauce
- 2 tablespoons soy sauce
- 2 teaspoons sambal oelek (chili paste) or sriracha
- Vegetable oil
Instructions
- Cut 2 to 3 pork belly slices into strips or cubes and set aside. Roughly chop 2 shallots, slice 1 bunch of green onions, and finely chop 3 cloves garlic. Rinse 1 cup bean sprouts and set aside.
- Heat some vegetable oil in a wok and scramble 2 eggs. Remove from the wok and set aside.
- Add a little more oil to the wok and stir-fry the pork belly for 4 to 5 minutes, until crispy on all sides.
- Meanwhile, prepare the noodles by soaking them in boiling water for 4 to 5 minutes.
- Add 4 oz large shrimp, the shallots, and garlic to the wok and stir-fry for another 2 to 3 minutes.
- Reduce the heat slightly and add 3 tablespoons water along with 1 crumbled vegetable bouillon cube.
- Add the bean sprouts and sliced green onions. Then add the egg noodles and scrambled eggs.
- Finally, add 2 to 3 teaspoons sambal oelek (or sriracha), 2 tablespoons soy sauce, and 2 tablespoons fish sauce. Toss everything thoroughly so the flavors are well combined.
- Finish with roughly chopped chives and serve with a lime wedge and red chili pepper, if desired.
Notes
You can also substitute the shrimp with pieces of chicken!
