Creamy Dill Chicken with Mushrooms

Creamy mushroom dill chicken

In just 30 minutes!

Chicken and mushrooms are one of those combinations that never gets old.

The tender chicken and earthy mushrooms complement each other perfectly. Add a creamy dill sauce and you have a dish that feels both simple and a little refined. It’s the kind of meal you can easily make on a weeknight, but it’s just as good for serving to guests.

Creamy Dill Chicken

What we love about Creamy Mushroom Dill Chicken is that it’s easy to make but still tastes special. A few basic ingredients, a splash of wine, a little broth, and of course dill are really all you need.

A creamy sauce

The sauce is without a doubt the star of this dish. Once the chicken and mushrooms have released their flavors, we deglaze the pan with white wine and a little broth. Then we add sour cream, which makes the sauce wonderfully creamy without making it too heavy. And then, of course, there’s the dill. It has its own distinctive flavor and is just what the sauce needs to bring everything together.

The great thing about this sauce is that it goes with just about anything. Serve it with pasta for a complete Italian-style meal. Or choose white rice, which soaks up the creamy sauce perfectly. With pan-fried potatoes, you get a nice crispy contrast. It’s the kind of sauce that works with so many sides, making it hard to decide what to serve with it each time.

Easy to adapt

Another great thing about this recipe is how easily you can adapt it. No white mushrooms at home? Cremini mushrooms work just as well and have a slightly deeper flavor. Prefer not to use wine? Simply leave it out and add a little extra water. And if you want to make it even creamier, you can add a small amount of heavy cream along with the sour cream.

  • 1/2 chicken bouillon cube (0.18 oz)
  • 1 tablespoon all-purpose flour
  • Fresh dill

  2. Add 1 finely chopped shallot and 2 finely chopped garlic cloves. Sauté with the chicken for 2 minutes.
  3. Add 10 oz sliced mushrooms. Cook for about 7 to 8 minutes, until the mushrooms are browned, stirring regularly.
