Description
Creamy Mushroom Dill Chicken with tender chicken, mushrooms, fresh dill, and a creamy sauce. An easy dinner ready in just 30 minutes.

- 12 oz boneless, skinless chicken thighs (or chicken breasts)
- 10 oz mushrooms
- 1/2 cup sour cream
- 1/2 cup dry white wine
- 2 cloves garlic
- 1 shallot
- 1/2 chicken bouillon cube (0.18 oz)
- 1 tablespoon all-purpose flour
- Fresh dill
- Olive oil
Instructions
- Cut the chicken thighs (or chicken breasts) into bite-sized pieces and season with salt and black pepper. Cook the chicken in a splash of olive oil over medium heat for about 5 minutes, until browned on all sides.
- Add 1 finely chopped shallot and 2 finely chopped garlic cloves. Sauté with the chicken for 2 minutes.
- Add 10 oz sliced mushrooms. Cook for about 7 to 8 minutes, until the mushrooms are browned, stirring regularly.
- Deglaze the pan with 1/2 cup dry white wine. Add just under 1 cup warm water and crumble in 1/2 chicken bouillon cube. Bring to a gentle simmer and stir well.
- Add 1/2 cup sour cream and a generous handful of finely chopped fresh dill.
- In a small bowl, mix 1 heaping tbsp all-purpose flour with 4 tablespoons (about 1/4 cup) liquid from the pan to form a smooth paste. Add the mixture to the pan and stir well. Simmer for a few more minutes until the sauce has thickened.
- Serve with white rice, pasta, pan-fried potatoes, or whatever you’re in the mood for.
