Description

Burrata with roasted grapes is a simple appetizer made with creamy burrata, roasted red grapes, and a touch of fennel.


Ingredients

  • 1 lb seedless red grapes
  • 2 cloves garlic
  • 1 burrata (8 oz)
  • 3 tablespoons sherry vinegar or red wine vinegar
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon brown sugar
  • 2 teaspoons fennel seeds
  • Coarse sea salt
  • Black pepper
  • Fresh basil

Instructions

  1. Preheat the oven to 400°F.
  2. Wash the grapes and place them in a medium baking dish.
  3. To make the marinade, combine the sherry vinegar or red wine vinegar, olive oil, brown sugar, lightly crushed fennel seeds, and the garlic, pressed. Lightly crush the fennel seeds using a mortar and pestle or the back of a spoon.
  4. Toss the grapes thoroughly with the marinade and roast for 20 to 25 minutes.
  5. Serve with the burrata, a few fresh basil leaves, coarse sea salt, black pepper, and an extra drizzle of olive oil.
