Where does rendang come from?

Beef rendang originally comes from West Sumatra, where the Minangkabau community has been preparing this dish for centuries. Traditionally, rendang was made for special occasions, because the slow cooking in coconut milk and spices not only creates incredible flavor, but also helps preserve the meat for a long time.

The perfect balance

One of the secrets behind rendang is the combination of spices and coconut milk. The meat slowly cooks for hours in a mixture that includes lemongrass, garlic, shallots, ginger, and turmeric. This allows the flavors to soak deep into the meat and creates a rich, complex taste.

The long cooking process also thickens the sauce until it is almost completely absorbed by the meat, giving rendang its signature dark, fairly dry texture. Prefer a milder version? Then you can simply cook the dish a little less time so it keeps more of a curry-like consistency.

How spicy do you make your rendang?

Like many Indonesian dishes, rendang comes in many variations. But one ingredient should not be left out if you want the authentic flavor: lomboks (fresh red chile peppers) or small red bird’s eye chiles. They give rendang the heat that makes the dish so popular.

Indonesian rendang curry

Not a big fan of spicy food? No problem. Leave out the Thai bird’s eye chilies and you will get a milder version that is still full of flavor. If you enjoy extra heat, feel free to add more chilies and adjust the amount until you find the balance you like best.

Description

Ingredients

  • 2 lb beef chuck, cut into large chunks
  • 2 cups coconut milk
  • 5 candlenuts (or macadamia nuts), optional
  • 3 shallots
  • 3 salam leaves (Indonesian bay leaves), optional
  • 3 cloves garlic
  • 3 fresh red chiles and/or 4 bird’s eye chiles
  • 2 cloves
  • 1 stalk lemongrass
  • 2 teaspoons ground coriander
  • 2 teaspoons ground ginger
  • 1 teaspoons ground turmeric
  • 1 teaspoons tamarind paste, optional
  • Vegetable oil

Instructions

  1. Cut 2 lb beef chuck into large chunks and brown them on all sides in a splash of vegetable oil in a large Dutch oven.
  2. Meanwhile, blend 3 shallots, 3 cloves garlic, 3 red chiles, 4 bird’s eye chiles, 5 candlenuts (optional), 2 cloves, 2 tsps ground ginger, 1 tsp ground turmeric, 2 tsp ground coriander, and a splash of vegetable oil in a small food processor until smooth to make the spice paste.
  3. Add the spice paste to the meat and cook for a few minutes while stirring. If you like, add 1 generous tsp tamarind paste.
  4. Pour in just over 2 cups coconut milk along with 3 salam leaves (optional) and 1 bruised stalk lemongrass.
  5. Bring to a gentle simmer, lower the heat, and let it cook slowly for at least 3 hours. Stir occasionally.
  6. During the last 30 minutes, remove the lid so the sauce can reduce and thicken to the desired consistency.
  7. Serve with white or yellow rice, cucumber or atjar ketimoen (Indonesian cucumber pickle), and for example sayur boontjes (Indonesian green beans in coconut sauce) Selamat makan!
