This is without a doubt one of the best chicken burritos you’ll ever make.
The combination of different vegetables and a homemade spice blend is absolutely delicious. Add two flavorful sauces, and this burrito tastes just as good as one from an authentic Mexican restaurant. It takes a little chopping, but the result is well worth it!
Delicious filling
The base of this burrito consists of tender pieces of chicken seasoned with a blend of paprika, ground cumin, cayenne pepper, salt, black pepper, and dried oregano. Combined with shredded carrot, finely chopped bell pepper, garlic, red jalapeño pepper, and shallots, it makes a delicious filling with the perfect balance of mild heat and sweetness. The vegetables add plenty of flavor and give the filling a nice bite. And, of course, kidney beans are a must.
Essential sauces
No burrito is complete without a couple of good sauces! We make two: a creamy white sauce and a fresh avocado sauce. For the white sauce, we mix sour cream with paprika, a finely chopped garlic clove, and a pinch of salt and black pepper. The avocado sauce is simply made by mashing a ripe avocado with a little lime juice. These sauces are the perfect finishing touch.
Assembling and finishing the burritos
For four generously filled burritos, use large flour tortillas. Fill each tortilla with the chicken mixture, add a generous layer of white sauce, followed by crisp iceberg lettuce, a spoonful of avocado sauce, and finally some shredded cheddar cheese. You can, of course, layer the ingredients in any order you like. Fold the burritos tightly and wrap them in aluminum foil to keep them warm. Cut them in half and enjoy! Have leftovers? No problem. They’re perfect for lunch the next day.

Here’s one more fun fact. Did you know that “burrito” literally means “little donkey”? The word comes from the Spanish word “burro,” meaning donkey. The name probably originated because the shape of a burrito resembles the packs that donkeys once carried to transport goods. Ingredients
- 14.5 oz (1 can) diced tomatoes
- 11 oz chicken breast
- 1 cup kidney beans
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 4 oz iceberg lettuce
- 4 large flour tortillas
- 3 garlic cloves
- 2 shallots
- 1 red jalapeño pepper
- 1 yellow bell pepper
- 1 red bell pepper
- 1 avocado
- 1 lime
- 1/2 large carrot
- 3 teaspoons paprika
- 2 teaspoons ground cumin
- 1 teaspoon cayenne pepper
- 1/2 teaspoon dried oregano
Instructions
- Cut 11 oz chicken breast into very small pieces. Do the same with 1 red and 1 yellow bell pepper. Finely chop 2 shallots, 1 red jalapeño pepper, and 2 garlic cloves. Shred 1/2 large carrot and 1/2 cup cheddar cheese.
- Make a spice blend with 2 teaspoons paprika, 2 teaspoons ground cumin, 1 (scant) teaspoon cayenne pepper, 1/2 teaspoon salt, 1/2 teaspoon black pepper, and 1/2 teaspoon dried oregano.
- Heat a large skillet or wok and cook the chicken pieces in a splash of oil until cooked through on all sides. Add the finely chopped shallots, garlic, and red jalapeño pepper. Cook briefly over medium heat, stirring frequently.
- Add the bell peppers, carrot, and kidney beans and mix well. Add the spice blend as well.
- Add the diced tomatoes and stir well. Let everything simmer for 5 to 10 minutes.
- Meanwhile, make the white sauce by mixing 1/2 cup sour cream with 1 teaspoon paprika, 1 finely chopped garlic clove, and a pinch of salt and black pepper.
- Next, make the avocado sauce by mashing 1 avocado and mixing it with a splash of lime juice.
- Warm the tortillas in the oven, microwave, or a skillet. Fill each tortilla with the chicken mixture, a generous layer of white sauce, iceberg lettuce, some avocado sauce, and finally the cheddar cheese. You can add the ingredients in any order you like. Fold the tortilla tightly, then wrap it in aluminum foil. Cut it in half and enjoy!
