  • 1 1/3 lb boneless, skinless chicken thighs
  • 1/2 cup sake
  • 1/2 cup soy sauce
  • 1/4 cup mirin
  • 2 tablespoons packed brown sugar
  • Green onions
  • Vegetable or peanut oil
  • Sesame seeds, optional

Instructions

  1. Soak the wooden skewers in water for at least 15 minutes.
  2. To make the tare sauce, combine the sake, soy sauce, mirin, and brown sugar in a small saucepan. Bring just to a boil, then reduce the heat and let it simmer for about 20 to 25 minutes, stirring occasionally, until it thickens into a glossy sauce.
  3. Cut the chicken thighs into small, even pieces and thread them onto the soaked skewers. Brush the skewers lightly with vegetable or peanut oil.
  4. Grill the skewers on an outdoor grill or indoor grill pan, searing them on all sides first. Then brush them regularly with the tare sauce while they finish cooking, until the chicken is cooked through.
  5. Serve topped with sliced green onions and, if you like, a sprinkle of sesame seeds. Offer any remaining tare sauce on the side.
