Description

This fresh and healthy tuna wrap with tomato and pickles is the perfect choice for a light lunch.


Ingredients

  • 2 cups arugula mixed greens
  • 2 flour tortillas
  • 1 can (5 oz) tuna, drained
  • 1 shallot
  • 1 tomato
  • 2 tablespoons plain Greek yogurt
  • 1 tablespoon mayonnaise
  • 1 teaspoon Dijon mustard
  • 5 mini pickles

Instructions

  1. Drain 1 can of tuna and place it in a mixing bowl.
  2. Finely chop the shallot (or a small red onion), dice the tomato, and finely chop a few mini pickles. Add everything to the drained tuna.
  3. Add the Greek yoghurt, 1 generous tablespoon mayonnaise, the mustard, and a good pinch of salt and pepper. Mix well and taste. Add more mayonnaise if needed.
  4. Lay out the tortillas and top them with the arugula mixed greens (or any lettuce of your choice). Spoon the tuna mixture on top and roll the wraps up tightly. Wrap them in aluminum foil and place them in the fridge for 10 to 15 minutes.
  5. Cut the wraps in half and serve right away.
