Description

Sicilian Pasta with Burrata is made with homemade pistachio pesto, fresh basil, Parmesan, and creamy burrata. An easy vegetarian pasta recipe ready in just 15 minutes.


Ingredients

  • 6 oz casarecce (or pasta of your choice)
  • 0.7 oz fresh basil leaves
  • 2/3 cup shelled pistachios
  • 2/3 cup grated Parmesan cheese
  • 1/4 cup extra virgin olive oil
  • 2 garlic cloves
  • 1 ball burrata
  • 1/2 lemon
  • Salt and freshly ground black pepper

Instructions

  1. Cook 6 oz pasta according to the package directions until al dente.
  2. Meanwhile, finely chop 2/3 cup shelled pistachios in a small food processor.
  3. Add 0.7 oz fresh basil leaves, 2/3 cup grated Parmesan cheese, 1 to 2 garlic cloves, the juice of 1/2 lemon, and a scant 1/4 cup extra virgin olive oil to the food processor and blend until smooth.
  4. Drain the pasta, reserving a little of the pasta cooking water.
  5. Toss the pistachio pesto with the pasta, adding a splash of the reserved pasta water if needed. Divide between 2 plates. Tear the burrata over the pasta and finish with a pinch of salt, freshly ground black pepper, and a few extra basil leaves.
