Description

Penne all’Arrabbiata with a spicy tomato sauce, chorizo, chili peppers, and Parmesan. An easy Italian pasta dish that’s ready in just 30 minutes.


Ingredients

  • 1 can (14.5 oz) diced tomatoes
  • 7 oz chorizo
  • 7 oz penne pasta (or other pasta)
  • 1/2 cup dry white wine
  • 2 cloves garlic
  • 2 (or more) red chili peppers (such as jalapeño)
  • 1 onion
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme leaves
  • Grated Parmesan cheese

Instructions

  1. Cut the chorizo into bite-size pieces and cook over low to medium heat (without oil).
  2. Meanwhile, finely chop 1 (small) onion, 2 cloves garlic, and 2 red chili peppers. Add them to the chorizo and sauté for a few minutes.
  3. Add 1 tablespoon tomato paste and stir to combine. Cook for 3 minutes over medium heat. Add just under 1/2 cup dry white wine.
  4. Meanwhile, bring a large pot of water to a boil for the penne.
  5. Add 1 can diced tomatoes, 1 teaspoon dried thyme, and a generous pinch of salt and pepper. Stir to combine and let the sauce simmer while the penne cooks until al dente (about 10 minutes).
  6. Add the penne to the sauce and toss well to combine. Serve with freshly grated Parmesan cheese and a fresh salad, if desired.
