Description
Indonesian Bean Soup with pinto beans, smoked pork, vegetables, and sweet soy sauce. A hearty bean soup that’s ready in just 30 minutes.

- 25 oz pinto beans
- 15 oz diced mirepoix mix (chopped soup vegetables)
- 8 oz sliced smoked bacon
- 2 potatoes
- 2 cloves garlic
- 1 1/2 cups beef broth
- 3 tablespoons kecap manis or sweet soy sauce
- 3 tablespoons crispy fried shallots
- White rice
Instructions
- Pour 1 1/2 cups beef broth into a soup pot. Add 4 1/2 cups water and bring to a gentle simmer.
- Meanwhile, cut 8 oz sliced smoked bacon into small pieces and cook in a skillet without oil, stirring regularly, until lightly crisp.
- During the last few minutes, add 2 to 3 sliced garlic cloves to the smoked bacon and sauté briefly. Drain on paper towels.
- Add 15 oz diced mirepoix mix (chopped soup vegetables) to the soup along with 2 small (pre-cooked) potatoes, diced.
- Drain and rinse 25 oz pinto beans under cold water. Add them to the soup and heat for another 5 to 10 minutes without letting it boil.
- Add 3 tablespoons kecap manis or sweet soy sauce (see above for a subsitute) and 3 tablespoons crispy fried shallots. Add the smoked bacon as well. Serve with white rice and/or a chicken dish.
