Description

Think tender pieces of chicken, crisp vegetables, and a sauce that is sweet, savory, and packed with umami.


Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 8 oz cremini mushrooms
  • 2 garlic cloves
  • 1 bunch green onions
  • 1 red bell pepper
  • 3 tablespoons hoisin sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon soy sauce
  • 1 inch fresh ginger
  • White rice (or noodles)
  • Vegetable oil
  • Sesame seeds (optional)
  • Cashews (optional)

Instructions

  1. Marinate the chicken thighs with 2 to 3 tablespoons oyster sauce and 1 tablespoon soy sauce. Set aside for a few minutes.
  2. Meanwhile, finely chop the garlic and grate about 1 inch of fresh ginger (or chop it very finely).
  3. Slice the mushrooms, cut the red bell pepper into thin strips, and cut the green onions into larger pieces.
  4. Heat a splash of vegetable oil in a wok and stir-fry the marinated chicken for about 5 minutes. The chicken does not need to be fully cooked yet.
  5. Add the sliced bell pepper, green onions, and mushrooms and stir-fry over (medium)high heat. At first the vegetables will release some moisture. Continue stir-frying until the liquid has mostly evaporated.
  6. Toward the end, add the garlic and ginger and cook for another minute while stirring. Add the hoisin sauce and stir-fry for another 2 to 3 minutes. Serve with sesame seeds, some chopped cashews, extra green onions, and white rice or noodles if you like.
