- 1 lb boneless, skinless chicken thighs
- 8 oz cremini mushrooms
- 2 garlic cloves
- 1 bunch green onions
- 1 red bell pepper
- 3 tablespoons hoisin sauce
- 2 tablespoons oyster sauce
- 1 tablespoon soy sauce
- 1 inch fresh ginger
- White rice (or noodles)
- Vegetable oil
- Sesame seeds (optional)
- Cashews (optional)
Instructions
- Marinate the chicken thighs with 2 to 3 tablespoons oyster sauce and 1 tablespoon soy sauce. Set aside for a few minutes.
- Meanwhile, finely chop the garlic and grate about 1 inch of fresh ginger (or chop it very finely).
- Slice the mushrooms, cut the red bell pepper into thin strips, and cut the green onions into larger pieces.
- Heat a splash of vegetable oil in a wok and stir-fry the marinated chicken for about 5 minutes. The chicken does not need to be fully cooked yet.
- Add the sliced bell pepper, green onions, and mushrooms and stir-fry over (medium)high heat. At first the vegetables will release some moisture. Continue stir-frying until the liquid has mostly evaporated.
- Toward the end, add the garlic and ginger and cook for another minute while stirring. Add the hoisin sauce and stir-fry for another 2 to 3 minutes. Serve with sesame seeds, some chopped cashews, extra green onions, and white rice or noodles if you like.
