Easy chili con carne with ground beef, beans, and warm spices. A rich and comforting Tex-Mex dinner that’s perfect for any night of the week.

- 1 lb ground beef
- 1 (14.5 oz) can diced tomatoes
- 1 (15 oz) can kidney beans, drained and rinsed
- 1 cup corn (optional)
- 1/2 cup sour cream (optional)
- 2/3 cup red wine
- 2 cloves garlic
- 1 shallot
- 1 red bell pepper
- 1 large carrot
- 2 teaspoons cayenne pepper
- 2 teaspoons ground cumin
- 2 teaspoons paprika
- Fresh parsley (optional)
Instructions
- Finely chop 1 large shallot and mince 2 cloves of garlic. Cook over medium heat in a generous splash of olive oil.
- Meanwhile, dice 1 large carrot and 1 red bell pepper into small pieces and add to the pan. Cook for a few minutes, stirring occasionally.
- Add the ground beef along with 2 teaspoons cayenne pepper, 2 teaspoons ground cumin, 2 teaspoons paprika, 1 teaspoon salt, and a good amount of black pepper. Cook until the beef is browned, breaking it up as it cooks.
- Pour in the red wine (about 2/3 cup) and let it simmer for a few minutes until slightly reduced.
- Add the diced tomatoes and mix everything well.
- Stir in the beans and, if using, the corn. Let it simmer on low heat for at least 30 minutes with the lid slightly ajar. The longer it cooks, the better it gets.Serve with white rice and, if you like, top with sour cream, fresh parsley, and shredded cheddar cheese.
