Description

This Cantonese chicken is an easy Chinese stir-fry with tender chicken in a savory sauce. Perfect for a quick weeknight dinner.


Ingredients

  • 1 3/4 lb boneless, skinless chicken thighs
  • 2 shallots
  • 2 garlic cloves
  • 1 red chili pepper (such as a jalapeño), optional
  • 1 bunch green onions
  • 5 tablespoons soy sauce
  • 2 tablespoons mirin
  • 1 tablespoon oyster sauce
  • 1 tablespoon granulated sugar
  • 1 tablespoon cornstarch
  • 2-inch piece fresh ginger
  • Vegetable oil

Instructions

  1. In a large bowl, combine the soy sauce, oyster sauce, sugar, and cornstarch. Cut the chicken thighs into bite-sized pieces and add to the marinade. Mix well and let marinate in the refrigerator for at least 15 minutes.
  2. Slice the shallots into half-moons, roughly chop the garlic, and peel and roughly chop the ginger.
  3. Heat a generous amount of vegetable oil in a wok over medium-low heat. Cook the shallots, garlic, and ginger for about 10 minutes while the chicken marinates. Add the sliced red chili pepper if using.
  4. Add the chicken and stir-fry for 5 to 7 minutes, or until cooked through. Add the mirin and stir to combine. Cover and let simmer for a few more minutes.
  5. Serve with white rice and top with sliced green onions.
