Description
Bobotie is a South African beef casserole made with curry spices, raisins, mango chutney, and a creamy egg topping. A true comfort food classic.

- 1 1/2 lb ground beef
- 5 oz sweet mango chutney
- 1 1/2 cups whole milk
- 1/4 cup raisins
- 4 bay leaves
- 3 large eggs
- 3 slices white sandwich bread
- 2 onions
- 2 cloves garlic
- Juice of 1/2 lemon
- 1 tablespoon apricot preserves
- 4 teaspoons curry powder
- 3 tablespoons tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 1 teaspoon turmeric
- Olive oil
Instructions
- Preheat the oven to 350°F.
- Remove the crusts from the white sandwich bread and cut the bread into small cubes. Pour about 1/2 cup whole milk over the bread and let it soak for a few minutes.
- Finely chop 2 to 3 onions and mince the garlic. Heat a generous splash of olive oil in a large skillet over medium heat. Cook the onions for about 3 minutes, then add the garlic and cook for 1 minute more
- Reduce the heat to low and add the curry powder, ground cumin, dried oregano, and turmeric. Stir well to combine. Add a little extra olive oil if needed and cook for 1 minute.
- Add the ground beef and cook, breaking it up with a spoon, until browned. Season with a pinch of salt and black pepper.
- Turn off the heat and stir in the mango chutney, apricot preserves, lemon juice, tomato paste, and raisins.
- Squeeze the excess milk from the soaked bread and add the bread to the meat mixture. Stir well until the bread is fully incorporated. This helps bind the mixture together.
- Transfer the meat mixture to a baking dish, or leave it in the skillet if it is oven-safe. Press it down evenly using the back of a spoon.
- In a mixing bowl, whisk together the eggs and 1 cup whole milk. Season with a pinch of salt and black pepper.
- Pour the egg mixture over the meat. Arrange the bay leaves on top and bake for 40 to 45 minutes.
- Serve with rice and, if desired, a fresh salad.
